This morning the Texas Wendish Heritage Society held a Wendish coffee cake baking class at the museum complex in Serbin. Joyce Jenke was the instructor, and she did a fantastic job walking the folks in the class through the process of making a coffee cake. During the class, she baked two streusel coffee cakes (one with cinnamon in the streusel, and one more traditional one without the cinnamon) using dough she had prepared ahead of time (since it takes a while for it to rise), and then walked everyone through making the dough.
It was really awesome to see that about two dozen folks came out to learn how to make this delicacy… and even though I was just there to take pictures (some of which will appear in the fourth edition of Texasko-Serbski Nowinkar, the newsletter of the TWHS), I got to sample some of the finished product… it was very, very good! Of course, I don’t think I’ve ever met a Wendish coffee cake I didn’t like…
The Society is planning on hosting another class after Wendish Fest, and this time around I’m planning on actually attending as a student (along with Margie) so that we can start making these at home.
